Vegetable Kurma 

 

Ingredients : 

Coconut -1 cup

Peas, carrot, beans, cauliflower, potato - 100 gms

Onions - 1

Tomato - ½
Mint leaves - 10 gms

Coriander leaves - 8 gms

Cashew nuts - 1 tsp

Clove, cardamom, cinnamon - each 2
Green chillies - 5

Ginger & garlic paste - 1 tsp


To grind :

Take the coconut, cashews, the spices, mint leaves, coriander leaves and green chillies, 

ginger & garlic and grind them well adding 3 cups of water to the paste.


Preparation :

Heat some oil in a pan add the cut onions, let them turn golden brown, and then add 

the tomatoes. 

 

Add the vegetables after the tomatoes are cooked

 

Now add the vegetables, (Cook the potatoes separately) and fry the vegetables well.

 

Then add the ground paste .

 

Bring the paste to a boil. Now add the cooked potatoes with salt .

 

After adding the potatoes let the kurma boil for about 15 minutes in simmer

 

Tip : While grinding the paste add water so that the kurma is not too thick.
