Tambuli with Spinach
Ingredients:
Cut spinach leaves - abt 2 cups
Fresh cilantro - 1/4 cup
mint leaves - 5-6
olive oil - 1/2 tbsp
cumin seeds - 1/2 tsp
ginger - small piece
Diced Green chilli - 1 or 2
coconut grated or powder - 1 tbsp
salt - 1/2 tsp
Preparation:
1) Heat olive oil in a frying pan. Add cumin seeds and fry them for 30-40 seconds
2) Then add chillies and ginger and fry them until they turn golden brown.
3) Then add the spinach leaves and mix them well. Cook until they become soft and lose their moisture.
4) Remove the pan and let it cool for about 10 minutes.
To Grind:
In a blender, add the spinach, cilantro and all the other ingredients.
Blend enough to make a smooth paste. Add a
little water if too thick.
Garnish with mint leaves.
Goes very well with rice or chapathi.
