Stuffed Baigan with ALOO
Ingredients
1/2 KG Cooked potatoes. ( Semi cook themand keep them aside)
1 kg Brinjals preferably round ones.
2 large onions
Dry Red chillies 4 or 5 or (according to your taste)
Veg oil 200ml
2 table spoon of butter.
Preparation
Wash and wipe the brinjals.
Make 6 or 8 slits in each one with the stem intact.
Chop and grind onion to a paste with some salt and the redchillies.
Stuff the brinjals with the paste.
Heat oil in a deep pan.
Once the oil is hot put the stuffed brinjals and close it with a lid.
After the brinjals become very tender put the butter add the potatoes .
Let the brinjals fry till oil come out.
Garnish with coriander leaves.
This dish tastes best with dal and hot rice.
