Spinach with sweet potato Ingredients : Spinach – 200 gms Onion –1 Urud dal – 1 tsp Chana dal – 1 tsp Jeera – ½ tsp Mustard seeds – ½ tsp Coconut oil – 3 tsp Shredded coconut – 2 tsp Curry leaves Coriander leaves Green chillies – 4 Chilli powder – 2 tsp Salt to taste Sweet potato – 100 gms Preparation Cook the sweet potato separtely well, in boiling water by removing the skin for about 13 minutes or microwave it for about 6 minutes. Then smash the sweet potato well and keep it aside. Heat the coconut oil in a kadai, add the mustard seeds ,urud dal , chana dal, jeera. Then add the cut onions Fry them till they turn golden brown add the green chillies Now add the cut spinach , just sprinkle some water , then close the vessel with a lid let the spinach cook for about 3 – 5 minutes Now if needed sprinkle more water, orelse add the salt ,chilli powder , curry and coriander leaves. Now add the smash potatoe to the spinach , and mix it well Remove the vessel from the stove and add the shredded coconut to it
