Vegetarian puffs

For the Puffs:

Ingredients :

 

All purpose flour - 3 cups

Butter

salt

 

Preparation :

 

Add salt to the all purpose flour , and mix it well by adding water to it.

 

Mix it well to become a nice flour like the chappathi flour

 

Add some oil to it and keep kneading the flour till the flour becomes really tender.

 

cover the flour with a moist cloth and let it stay for about an hour .

 

 

After an hour knead the flour once more before making the puff,

Have the butter or vanaspathi to be cut into equal parts of 3 pieces

 

Spread some oil to the surface on which the puff is to be prepared and spread the flour like chappathi but into rectangles.

 

 

apply ghee or vanaspathi to only one side of the rectangle spread dough and make them into equal rectangles.

 

Join the sides which do not contain the ghee and make it again to a rectangle.

 

Now the rectangle you have made would have several layers of dough now, keep the masala that is prepared in the middle of it and heat the oven to 330 degree Centigrade 

 

And spread a foil paper or any oven safe dish and keep all the puffs made in them.

 

It may take 30 - 40 minutes for the puffs to be cooked, keep checking once in a while to make sure that everything is fine.

 

 

 

Tip:

Use cold water to knead the flour.

 

Use the dry all purpose flour to the stick that is being used to spread the dough inorder to avoid the sticking of the dough to the stick

 

For the inner stuffing

Ingredients

Onion - 1 finely chopped

carrot ,peas,beans - 1 cup all together

Potatoes - 3

garam masala - 3 tsp

salt  to taste

chilli powder - 1 tsp

coriander leaves 

lemon juice - 2 tsp

turmeric powder - 1 tsp

To grind :

Ginger & garlic paste - 2 tsp

Greenchillies - 6

Dhaniya powder - 2 tsp

Jeera - 1 tsp

 

Preparation :

 

Cook the vegetables separately by boiling them with enough water in  a vessel or in the microwave for about 3 minutes.

Then also cook the potatoes as above and smash them well

 

Heat some oil in  a pan, add the finely chopped onions fry them until they turn golden brown

Then add the ground paste

Then add all the masala powders 

Add the cooked vegetables and the smashed potatoes to the fried onions, now add the coriander leaves to them and mix them well

Now finally add the lemon juice to it.
