Egg plant kolambhu

Ingredients: 

Eggplant - 1/2 kg
Tamarind water - 3 cups
Onion -2
red chillies - 7
jeera - 1 tsp
coriander seeds - 5 tsp
turmeric powder - 1/2 tsp
coriander leaves
curry leaves
asafetida - a pinch
salt to taste
mustard seeds

To grind 

Heat some oil in a pan and add the cut onions, asafetida, turmeric powder, coriander seeds, red chillies, jeera and fry them well.

Then, grind them well till you get a fine paste.

Preparation:

Heat some oil in a pan,  add the mustard seeds and add the cut onions, fry them well until it turns golden brown.

Now add the tomatoes,  after that add the cut eggplant and  let it fry well till they turn golden brown.

Then add the ground paste let them cook along with the eggplant.

Add the tamarind water and let it simmer for about 20 minutes.

Finally, garnish with coriander leaves and serve it hot with rice.
