Cauliflower
with scheuwan sauce
Ingredients
500 grams cauliflower florets
salt to taste
oil for deep frying
Other ingredients
1/2 teaspoon chopped garlic
1/2 teaspoon finely chopped ginger
1/2 teaspoon finely chopped green chillies
1 tablespoon chopped spring onions
3 to 4 tablespoons schezuan sauce
1 tablespoon oil
To be mixed into a thick batter
4 tablespoons plain flour
2 tablespoons cornflour
1/2 tablespoon oil
a little water
Method
1. Dip the cauliflower florets into the batter and deep fry over a high flame until crisp.
2. Heat the oil in a wok or frying pan on a high flame. Add the garlic, ginger and green chillies and stir fry over a high flame for a few seconds.
3. Add the spring onions and fry again on a high flame for a few seconds.
4. Add the Schezuan sauce and fried cauliflower florets and toss well. Add a little water, if the sauce is thick.
5. Serve hot.
