Aviyal (Mixed vegetable curry)
Ingredients : Potato,beans,carrot,drumstick,yam, peas ,raw banana - peel the outer skin and cut them into small pieces Coconut oil- 2 tspcurry leaves Curd - 2 cups To grind : Jeera - 1 1/2 tsp Green chillies - 8 Coconut - 1 cup soaked rice - 1 1/2 tsp
Preparation : Cut all the vegetables cook them with the required amount of water in the microwave or in a pressure cooker and keep it aside. Heat some oil in a pan , add the ground paste to the oil and let it cook till the oil seperates from the paste. Then add the cooked vegetables. finally when it comes to a boil, add the curry leaves and the curd to it, reduce the flame Then finally add 1 tsp of heated coconut oil to the avial.serve it hot with plain rice
